Is it possible to know how much gwei is being paid?

When unshielding ETH or ERC-20…

Is there some way to alter (or at least know) what the gwei rate being paid is before executing a transfer?


Is there a standard (or general estimated) number of gas units that are used in the unshielding transaction? The gwei rate could be calculated if this info was available. Like, a standard sending of ETH is 21,000 units of gas. Interacting with smart contracts is more expensive.
