When withdrawing from an exchange, they allow you to choose between networks, eg. BTC, ETH, BEP2, BEP20.
How do we decide which one to use when we are shielding?

Of the networks you listed, Incognito supports BTC, ETH and BEP2. BEP2/ BEP20 is not currently integrated with Incognito. See @abduraman’s correction below.
BEP2 is supported but as of now, there is single BEP2 asset in Incognito: BNB. Other BEP2 tokens can be added too.
If you withdraw BTC, use Bitcoin network. All other networks use wrapped version of BTC.
