why does the exchange not see the internal transaction from the incognito wallet ?

Are you using the mobile app or the browser-based wallet?

If on mobile, go to More > Settings > Clear Balance Cached.

Whenever you unshield via Incognito a smart contract is used so it would display under “internal transaction” this is a normal behavior.

Basically, if a sender address is Externally Owned Accounts (EOA) then polygonscan will display as a normal transaction but in case of sender is a smart contract then it will be displayed under internal transactions. I hope this clears it up for you?
