I will be moving soon so my node will be offline for a couple days until internet is installed at my new place. Will I be penalized due to my node being offline for a couple days?

If it is selected for committee during that time, yes your node will be slashed. Your stake in PRV will be returned to you in the event that happens but you will forgo the earnings on that cycle.
